Matt Smith has been welcomed back into the Freemasons fold with open arms as the new Head Chef. Matt has fast worked his way up the kitchen ranks gaining invaluable experience of the craft along the journey, starting with the Kingham Plough then onto Llys Meddyg Restaurant, Dinner by Heston Blumenthal, Sous Chef at the Freemasons and then Head chef at Hammet House.

I look forward to working alongside Matt again for this next chapter of Freemasons and becoming better and pushing the boundaries together to continue to improve and reach our goals.

Freemasons’ Wine-buyer, Resident Wine expert; and Master of Wine

Miles Corish (MW)

Miles is currently Managing Director of Bowland Forest Vintners, a wholesaler and retailer based in Lancashire, England. Born and educated in Sydney, Australia, his wine career began in 1994, where he worked as a sales representative for a subsidiary of Marie Brizzard.

After a two year stint, Miles left Australia and traveled to Yorkshire, England to fulfill a short-term contract to play professional cricket. Whilst in the UK the diversity of the wine offering and the opportunity to learn via WSET proved enticing and after a brief return to Australia, Miles moved to England to further a career in wine.

Whilst in the UK, and following a vintage at Tyrrells in 2001, Miles continued to travel back to the Hunter Valley (Australia) on a regular basis to work as an assistant winemaker. His passion for winemaking along with the generous assistance from family, friends and colleagues, enabled him to fufil one of his dreams and become a wine brand owner.

As well as running his company, Miles is a WSET Educator, has a wine education business, judges at wine competitions, consults for the on-trade and whenever time allows, returns to the Hunter Valley in Australia to make wine.

His success at Diploma, being awarded the Champagne Academy Golden Magnum, along with support from his partner Emma and two sons, proved sufficient encouragement to pursue a long held ambition to study for the Master of Wine.


Agnieszka Tyczka
Front of House Manager

Agnieszka or Aga as we like to call her comes with top credentials having worked at several Michelin starred restaurants, including The Vineyard in Berkshire.

Aga is our Front of House Manager and is also Steven’s fiancé, which means that the front and back of house run with complete synergy. She manages to run a tight ship and ensures that the food, drinks and service are all in complete harmony.

Aga was recently crowned Front of House Manager of the Year at the Top 50 Gastropubs awards 2016. Well known for her professionalism and warm and friendly disposition she is invaluable to Steven and the Freemasons team and appreciated by customers as this great accolade has now demonstrated.
