Wiswell Chef chosen for landmark foodie event

Chef/Patron Steven Smith, from Wiswells’ award winning Freemasons Country Inn, is delighted to have been chosen to take part in the London Restaurant Festival ‘American Express 10-10-10’.

This new landmark event has been created for this years festival to celebrate the extraordinary talent of chefs in London and across Britain. Casting aside their creative competitiveness, ten of the most talented chefs from outside London will join forces with their peers in London restaurants to offer a unique collaborative menu for a one-off Sunday lunch.

Steven will join head chef Matthew Foxon of the Criterion Restaurant for this exclusive event on 10th October 2010. Together they have created a bespoke lunch menu which showcases both their individual styles, as well as some interesting collaborative ideas.
The menu will comprise 10 dishes, served over three courses, all complemented by specially selected wines to suit each dish.

Diners can look forward to Orkney scallops, Goosnargh duck, truffled potato and egg yolk ravioli, Balmoral Estate venison, pumpkin pie, dark chocolate and Cointreau brownie and lemon meringue pie with walnut whips. All of these dishes will all feature on this unique menu, alongside two other starters and one other main course.

Both chefs incorporate only the finest produce into their dishes and are passionate about using fresh, seasonal ingredients, which is evident from this collaboration.
Steven and Matthew are in celebrated company. With 12 Michelin stars between them chef pairings include Alain Roux of The Waterside Inn with Hibiscus’ Claude Bosi and Raymond Blanc from Le Manoir aux Quat’ Saisons with Bruno Loubet of Bistro Bruno Loubet.

Steven commented, “I’m delighted to be involved in such an exciting event and at the prospect of serving my food to a new and wider audience. The pairing with Matthew is a great one as we both share the same ethos when it comes to our use of ingredients and how we source them”.
